This super easy recipe is great for tasty and fluffy waffles. I started making this recipe when I got a Belgian waffle maker, which adds deeper pockets than normal waffle makers, allowing the addition of fruit and other ingredients.

This recipe is based on a youtube video from Recipes by Carina, plus a few extra steps , including adding more sugar and separating the egg whites and folding them in. The egg whites in the recipe add a light and fluffy texture.The recipe below makes about 2-3 waffles with ¾ a cup of batter used per waffle.

Ingredients:

  • 1 cup of flour
  • ½ tablespoon of baking powder
  • ¼ teaspoon salt
  • 1 tablespoon sugar 
  • 1 egg, separated
  • 2 tablespoon + 2 teaspoons oil
  • 1 cup of milk
  • ½ teaspoon vanilla

First mix the dry ingredients in a large bowl. Then add the oil, milk, vanilla and egg yolk. In a separate bowl beat the egg whites with a hand mixer until stiff peaks form. Add into the large bowl and fold in the egg whites. When finished with egg whites pour ¾ a cup into the waffle maker. Leave the batter in the waffle maker until it stops steaming. Take out when cooked, serve appropriately.
