Easy to make recipes: penne alla vodka sauce

While pasta sauces can often come across as slightly intimidating, this sauce can be made in less than 30 minutes and is easily customizable to your own tastes. Not only is this a fast and easy recipe, but it is sure to impress anyone you share it with.

Ingredients: 

  • 1 clove of garlic, finely diced
  • Shallots/ onion, chopped into small pieces
  • Tablespoon olive oil
  • Chopped bacon, optional
  • Any small pasta (I prefer penne) cooked al dente
  • ½ cup pasta water
  • Tomato Paste 
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh or dried basil
  • 2 tablespoons vodka, optional
  • ½ cup parmesan cheese

Saute garlic, onions and bacon in olive oil. Take bacon out. Add in around a tablespoon of tomato paste. Mix till coated then add heavy cream. Mix well. The sauce should now be an orange color, add in vodka and let simmer down. Add in tomato paste if necessary. Add in pasta water and cheese then mix in salt, pepper and basil. When you are about to serve, mix in bacon and pasta.
